What does a letting agent actually do for the fee?

Letting agents sell three tiers. Tenant-find covers marketing, viewings, referencing and setting up the tenancy, then hands it over. Rent collection adds collecting rent, chasing arrears and accounting. Full management adds compliance oversight, repairs, contractor instruction, key holding, property visits and deposit dilapidation negotiation. Only full management involves anyone attending the property. Crucially, the legal duties stay with you as landlord at every tier — the agent performs tasks, but does not absorb liability.
